Gluten-Free Zucchini Carrot Cranberry Bread


Hello, Fall! Technically, you're still 3 days away but I'm already celebrating your arrival. You are my favorite season, after all! I love you so much that I decided to bake a loaf of gluten-free sweet bread in your honor. And guess what? It actually turned out pretty tasty, even though this is the first time I've made zucchini bread and used teff flour (...will be using it again, it is super-nutritious and scrumptious!).


You've been trying to sneak up on us, but the red and gold leaves rustling in the cool breeze are hinting that you're right around the corner! ... And because this bread was made just for you, it slightly captures your warm shades of earthy orange, fading greens, and even a few sprinkles of red and yellow! Can't wait 'til you're officially here :)! Recipe is below the poem...

We kinda miss fall in Southern California and I definitely miss it. I haven't stopped indulging in fall goodies, though. Where did you find teff flour?

I love your variation on traditional zucchini bread - this would be perfect for the holidays. I used teff recently for the first time, too, in some carrot date muffins and LOVE it. It's so grounding and earthy. I agree - it tastes fabulous too!

Mmmm, I love vegetables in cake and this is double the trouble!

I've actually just ordered a book called Red Velvet Chocolate Heartache that's all about baking cakes with veg in them. I believe she also tries to avoid wheat flours and uses rice flour instead so I believe it might be gluten-free-friendly! May be worth checking out.

I am jealous of your fall leaves already! If it would cool down to even the low 90's here then we might get some of those fall colors soon...I can't wait. This is a gorgeous loaf with some really delicious flavor combinations. Especially the cranberries!

I have made gluten free zucchini bread. I have made gluten free carrot bread. I have made GF cranberry bread but never have I made such a combo and I want to do it, now. My husband will love you from afar for this recipe.
