Gluten-Free Chocolate Chip Cookies (edited recipe)

Note: this is the picture from my first batch :).

One thing's for sure about this gluten-free baking business, it's forcing me to become more precise with my baking. I'm still trying to figure out all the tricks of the trade; it can be a bit tricky. It requires patience and precision. Silly as it may sound, I'm somewhat tempted to bake the same recipe using a different flour each time to really get a 'feel' (or taste) for each one. I think it might allow me to experiment more successfully, or confidently :). Right now, I'm pretty much doing what I used to do before, and that would be 'studying recipes'.

I just deleted the entry where I talked about the first recipe. I decided to keep these photos of the first recipe. After baking gluten-free for a few months, I came up with a much tastier recipe. So far, this one is my favorite gluten-free chocolate chip recipe :).

Oh yes, gluten-free baking DEFINITELY requires one to become more precise when preparing the baked good - but it's still a fun process!

The fact that the cookies become chewy is awesome - chewy cookies are the best kind, in my opinion :0)

these cookies sounds like a nice twist on an old fave... def gonna have to try it.. love the idea of adding coffee and molasses :)

I agree that coffee in chocolate recipes gives a definite depth and complexity to the chocolate. Makes it taste more grown up somehow, sophisticated. Does that make sense?

You're really finding a lot of creative ways to bake, and I just wanted to say bravo for taking a difficult diagnosis and turning it into a creative outlet :) Keep it up! Also, what a sweet husband you have, to insist upon going gluten free with you ;)

Mm wow well done on all this gluten free baking and experimenting with different flours! I love choco chip cookies and I am ashamed to say have actually never got round to making any home made ones! Its quite weird you mentioned about how you dont like coffee in your post but how you do like it in baked goods, I have literally just finished a post where I made mocha cupcakes and I like everything coffee flavoured...apart from coffee itself ahha!

So are you feeling much better now with your change to gluten-free? I agree that the addition of coffee is delicious and it definitely adds a bit of richness. Who can resist a chocolate chip cookie anyway?

I just tried your recipe. It needs a little modification:
1. you forgot to mention when to add the xantham gum or the chocolate chips.
2. the cookies spread ALOT and unfortunately I followed your directions for the first batch. Did you refrigerate the dough first? It did not say so in your recipe.

Brand spanking new to the gf world and am so, so, so happy to have a tasty treat. This turned out great! I didn't have any millet flour on hand, so used coconut flour and had to use almond milk. And then... um... well... it was really late and I totally went into regular baking mode and dumped 8 tbsp of butter in the bowl. So I hurriedly doubled everything up and it still worked!
